We’re heading into the darkest days of the year in northern latitudes. Does this give you the blues? If so, you could be planning ahead to arrange a culinary career with in places with close to 24 hours of daylight.
You could start with a November to February gig as Chef for White Desert Antarctica, cooking for guests in the interior of Antarctica, who visit “unclimbed mountains and emperor penguins.”
If luxury tourism is not your thing, the U.S. Antarctic Program’s research stations, staffed by the Alaska Native Village Corporation Gana-A’Yoo, need all kinds of food service professionals. Be sure to look for positions in the Austral Summer (December – March) for continuous sunlight.
When the sun begins to set on the Antarctic, you can set your sights back on the Northern Hemisphere. The Pursuit Collection needs a Chef (spring and summer) at the Denali Backcountry Lodge and Within the Wild Adventure Company needs a Sous Chef at the Tutka Bay Lodge (May through September).
To fill out your yearly schedule—albeit with more regular hours of darkness—apply to work as Field Manager for Whitman College’s fall Semester in the West program, cooking for a group of geology students in the forests of the Northwest to the deserts of Arizona and New Mexico. The job description notes that “it has been customary for the field manager to create a cookbook.” Perhaps you can leverage this into the start of your publishing career?
